Ingredients
Dressing
- 1/2 cup Red wine vinegar
- 1 envelope Italian dressing
- 2 Tbsp Parmesan or or feta cheese
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 tsp sugar
- 1 Tbsp dried parsley
- 1 tsp dried basil
- 3/4 cup olive oil
Salad
- 18 oz cheese tortellini (cooked as per package directions)
- 1 cup grated carrots
- 1 cup chopped celery
- 2 oz chopped ripe olives
- 1 cup thinly sliced red onion
- 1 cup chopped tomatoes
- 1 cup chopped fresh spinach
- Veggies can be included or excluded as desired
Procedure
Combine all ingredients for the dressing in blender, and blend to combine. Toss with salad ingredients. Serve immediately.
Comments
- Dress salad right before serving as spinach tends to wilt rapidly.
