Berglund:Chocolate Zucchini Bread

  • 3 eggs
  • 2 cups sugar
  • 1 cup oil
  • 1 tsp vanilla
  • 2 Tbsp butter
  • 6 Tbsp cocoa
  • 2 cups grated zucchini
  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1.5 tsp cinnamon
  • 2/3 cups chocolate chips
  • 2 tsp flour
  • 1 cup chopped nuts


Preheat oven to 350°F. Grease and flour 2 loaf pans. Combine eggs, sugar, oil and vanilla. Mix until well blended. * Add zucchini; blend well. Mix flour, soda, salt, cinnamon, and cocoa. Add to batter. Coat chocolate chips with 2 tsp flour (keeps them from sinking to the bottom of the pan). Add to batter along with nuts. Spoon into pans. Bake until toothpick comes out clean (60-70 minutes). Cool 5-10 minutes; remove from pans.

* The original recipe says here: "Melt butter, add cocoa. Blend until smooth. Set aside to cool." Then you add the cocoa mixture with the zucchini. I've stopped doing this because it's weird, and now I leave out the butter and just add the cocoa with the rest of the dry ingredients.
