Structure of Amylose
It turns out that amylose has a helical structure, and not the linear structure that I thought it did. Andy and I thought about using the alcohols on the glucose subunits to attract to the glass slides, but we assumed that the structure was a line. This means that we could use the alcohol groups everywhere on the amylose to do whatever we want, as long as they are facing outwards. Which they do.
